Instinct Roastery sits in Alam Sutera, a planned township in Tangerang west of Jakarta proper, so the trip is a deliberate cross-city move rather than an easy addition to a central route. The PROBAT roaster occupies the ground floor; a slanted wooden ramp leads to bright second-floor rooms with timber surfaces, large windows and a U-shaped bar. Ten seats face the main brewing station, with a smaller U-bar in the adjoining room.

Take a counter seat for Instinct's changing house roasts, rare international lots and monthly tasting sets. The baristas work in front of you and can explain as much or as little as you want. Short hours and the journey from central Jakarta make this a visit to plan in advance.

Coffee

Founder Christian Lie began brewing and roasting at home in Jambi in 2014. The Alam Sutera shop now houses a PROBAT UG15 downstairs and a retail selection of Indonesian and international coffees upstairs. Ask which bags are ready to brew if you are buying for home.

Espresso, milk drinks and seasonal signatures give a mixed group plenty to choose from. The barista can suggest a familiar profile or a more unusual process. A coffee seen online may have sold out, so check the day's selection.

Filter

Pour-over is the main draw. The brewer talks through the origin, variety, process and recipe at the U-shaped counter. A coffee may be split between glass and ceramic cups so you can compare how it tastes and cools in each.

For a more structured visit, ask whether the monthly Experience Set is running and whether it needs to be reserved. The format treats coffee as a short progression rather than a single cup, using changes in brewing, serving temperature or accompanying elements to reveal different parts of a lot. It costs more and takes longer than an ordinary filter, so save it for a coffee-led afternoon. A single pour-over at the main bar remains the better choice when time or budget is tighter.

Pastry

The dessert selection has included classic cheesecake with strawberry jam and a soft mochi cheesecake developed with local baker Ginchoux. Availability changes, and there is no full savoury menu. Eat before travelling if you need lunch.

Service & Room

The room is arranged around conversation. Pale timber, concrete and daylight keep the visual field quiet, while the inward-facing bar makes the brewing work the focal point. Instinct expanded into the neighbouring space as demand grew, adding seats without losing the close counter format. It can still feel busy at popular weekend times, and carefully prepared drinks may take a little while, so the opening hour is the safest target for an unhurried visit.

Service is technical but notably beginner-friendly. Staff ask what flavours you enjoy, explain the beans without assuming specialist knowledge and adjust the depth of the conversation to the person in front of them. A laptop may be possible when the room is calm, but the best seats are designed for tasting and exchange, not an extended work session. Come with enough time for one recommendation, a second cup if something surprises you, and a look through the retail coffee before leaving.
