Singular Coffee Roasters began in Barrio Italia in 2014, when founder Camilo Vásquez moved from working as a barista into roasting. The original cafe and roastery remains the useful starting point: a Girardi storefront east of Santiago's historic centre, in a district of design shops, restaurants, and low-rise residential streets. From the entrance, the room stretches through a brick-lined passage toward a quieter interior and terrace. The layout gives the visit more breathing room than a compact espresso counter.

Come for the coffee list rather than the supporting menu. Singular roasts its own beans, rotates origins from Latin America and East Africa, and gives manual brewing a serious share of the programme. Ask what is open for V60 or another filter method, explain the flavours you enjoy, and let the barista narrow the choice. Espresso and milk drinks are dependable alternatives, but the breadth of filter coffee is what makes Barrio Italia worth planning around. Cakes, pastries, and light savoury food can extend the stop; they do not turn it into brunch.

Coffee

The retail and brew selection can cover washed, natural, and more experimentally processed coffees, with current origins changing as lots move through the roastery. Tell the barista whether you want florals and citrus, deeper sweetness, or a more fermented profile. Singular's identity is not built around one permanent signature drink. Its advantage is the link between roasting, cafe service, and beans to take home. Food plays a supporting role. Expect cakes, cookies, pastries, sandwiches, and a few vegan options rather than a broad kitchen menu. Availability can change through the day, so look at the counter before building the visit around lunch. A sweet bake beside a filter works well; for a substantial brunch, choose another Barrio Italia address and keep Singular as the coffee stop.

Service & Room

The original room balances an industrial roastery character with a warmer back half. Brick, a long narrow plan, coffee equipment, and shelves lead toward tables and an interior terrace. The separation from the street makes the rear seats useful for reading, a quiet conversation, or a measured work session. It can still tighten around the counter at popular times, and the calmest experience comes before the later-afternoon flow.

Service matters because the choice is broad. Staff are most useful when you give them a preference rather than asking for an abstract 'best' coffee. Barrio Italia opens daily until 8pm, which makes it easier to place after galleries or shopping. Four other current Santiago locations — Lastarria, Suecia, Vitacura, and Los Leones — extend the same roaster across the city, but Girardi is the address to choose for the original roastery setting.
