Inside the house, an exposed-brick wall backs the espresso machine and small tables catch the daylight. Salvador metro station is nearby; come here for a seated filter and cake, or leave time for lunch.

Huelén is the larger of Draga’s two nearby cafés. It has a kitchen and table service, while the original at Román Díaz 56 has fewer seats and suits a shorter stop. Both serve the company’s own roasts, but this review is anchored to the Huelén room.

Coffee

Draga’s work extends from selecting green coffee to roasting, serving and teaching baristas. The origins change regularly, so ask what is on the grinder before ordering. The menu’s 1 + 1 pairs a single espresso with a cappuccino: a direct way to compare the coffee black and with milk. Flat white, latte and affogato are available separately.

For a cold drink, espresso can be paired with tonic, ginger beer or citrus soda. Matcha has its own range of hot and cold preparations, and plant milk is available.

Filter

Manual filter is a separate reason to visit. The selection has included coffees from Colombia and Rwanda alongside less common varieties, and the baristas can explain the available options before brewing. Describe whether you want a fruitier cup or something less bright, then choose from the day’s coffees. Bags of the house roasts are available to take home after tasting.

Food

Start with the sopaipilla pasada cake: pumpkin sponge with a reduction of chancaca, unrefined cane sugar, adapting the Chilean syrup-soaked snack into a slice. Banana bread comes toasted with sweet espresso butter.

For lunch, the arrollado sandwich puts Chilean rolled pork, pickled green chilli and semi-dried tomato in brioche. Roasted aubergine with garlic sauce is a vegan alternative on ciabatta. Avocado and egg toast, salads and filled croissants broaden the meal options; check the current menu if you are coming for a particular dish.

Service & Room

Choose between the small indoor room and pavement tables beside the trees. There is air conditioning inside, and the staff take time to talk through the coffees. The room is small enough that table choice matters if you are meeting a group. Huelén stays open until 8:30pm on weekdays and 8pm at weekends.
