Prototype Coffee's Strathcona roastery on East Hastings is built around choice: small roasters behind the counter, retail beans, grinders, and a wide coffee list. Go when you want to taste across coffees or leave with beans, not just grab the nearest flat white.

The Hastings address is the right anchor for Filter Notes because it makes the roasting visible. Production for brewing, retail, and wholesale happens on small Aillio Bullet roasters behind the counter, and the menu is set up to keep a wide range of coffees in play.

Coffee

Prototype's coffee programme is broad, bright, and deliberately choice-heavy. Drip, espresso, pour-over, seasonal espresso drinks, cold coffee, matcha drinks, and a rotating list of classic, juicy, experimental, decaf, and top-tier coffees give the bar its range. The best order is a pour-over or a coffee flight when available, followed by beans from the shelf if something lands. Milk drinks are there, but the sharper reason to go is the chance to taste several coffees from one roaster in one room.

Food

People come for the range: many coffees available by brew method, house-roasted beans, and a staff rhythm that can support questions. At Strathcona, waffle donuts and bottled drinks sit beside the coffee; the Mount Pleasant room adds sandwiches, salads, and weekend breakfast. Treat the waffles as a sidecar rather than the headline. Coffee is the point.

Service & Room

This is not the calmest long-stay cafe in Vancouver. Seating can be limited, with laptop limits and shorter stays part of the practical expectation. The area around East Hastings can feel rough to visitors who do not know Vancouver, so it is better framed as an intentional coffee detour than a lazy wander. Go in daylight, go for the coffee, and use the room as a tasting stop rather than an office.
