At Yipao Coffee in Pacific Beach, San Diego's coastal neighbourhood north of Mission Bay, a yellow Diedrich roaster stands behind the counter and bags of coffee line the walls. The Haines Street interior is small; most of the sitting happens outside at umbrella-shaded tables. Come for a Colombian pour-over, leave time to browse the beans, and take your cup out to the patio.
Coffee
Founders María Bahamón and Jairo Martinez have built Yipao around Colombian single origins, with much of their sourcing centred on Huila and Tolima, two of the country's coffee-growing regions. Jairo roasts at Pacific Beach; María's work as a Q Arabica Grader informs the tasting and quality control. The range runs from washed coffees with familiar caramel-and-chocolate profiles to fruitier naturals and more experimental lots.
Espresso or a cortado is a straightforward place to start. For something sweeter, the panela latte uses unrefined cane sugar and works hot or iced. There is room here for an everyday milk drink as well as a more involved coffee order.
Filter
Pour-over is the strongest reason to make the detour. Ask which coffees are being brewed that day, then choose by the flavours you enjoy: a cleaner washed cup or a more expressive natural. The retail range gives a sense of the breadth, with varieties such as Gesha, SL-28 and Wush Wush alongside more familiar Colombian selections. Availability changes, so treat the shelf as a starting point for a conversation rather than a fixed drinks list.
Read the producer, farm, variety and process before choosing a bag to take home. The rarer lots carry premium prices; ask the price and bag size before committing. A cup first is a sensible way to decide how far to explore.
Food
The small food selection covers pastries and sandwiches, with guava-and-cheese pie a distinctive sweet option when available. Plan on a light bite beside your coffee. A pastry on the patio fits the visit better than arriving with a full brunch in mind.
Service & Room
Order at the counter and ask for guidance if the varieties and processes on the bags are unfamiliar. There is plenty to discuss here, but little room to spread out indoors. Plan for outdoor seating and make this a morning or early-afternoon stop: Pacific Beach closes at 2pm Monday to Thursday and 4pm Friday to Sunday.
Why Filter Notes shortlisted Yipao Coffee
Yipao earns its place in San Diego for the range it finds within one coffee-producing country. Choose Pacific Beach for a brewed-to-order cup and a bag to take home, with time for a second drink if a patio table is free. It is worth planning around the early closing when Colombian coffee is the reason for your trip.
