Celsius Roasters has a cream counter, limewashed walls and a few small brass tables on the Croix-Rousse slopes, just north of Place des Terreaux in central Lyon. Come to taste coffee with the people who roast it: the changing Les Explorations V60 selection includes unusual fermentation methods, with advice at the counter before you choose a bag.
Coffee
Lucas Hubinon and Nicolas Le Fourn came to coffee from wine. Their rue des Capucins premises, opened in December 2024, combines roasting, packing and a tasting counter. Espresso and milk drinks offer a straightforward introduction; V60 gives you more scope to compare the changing lots. Ask the roasters about origins, processing and brewing before choosing your cup.
One example in the retail range is Virgo, a pink-bourbon coffee from Colombian producer Jhoan Vergara, processed with anaerobic fermentation and thermal shock, then decaffeinated using the sugarcane process. It gives decaf drinkers an option among the more experimental coffees. Treat it as an example of Celsius's buying approach, and check which beans are available to drink on the day.
The visit
Celsius offers booked workshops covering coffee production, roasting and tasting. For an ordinary visit, come for a V60 and advice on beans or brewing equipment to take home; the few tables suit a focused tasting better than a long laptop session.
