The Cobbled Roastery fits a roasting machine, an espresso counter and a handful of seats into a small shop on Thistle Street. This is central Edinburgh's New Town, north of Princes Street and just behind George Street's shops. A window seat looks onto the cobbles; bags of coffee are there to take home.
Coffee
Single origins roasted by the team are the main draw. There is a choice of beans for espresso, with chocolate-led Brazilian coffees and fruitier Ethiopian lots among the changing options. Ask what is on before ordering a cortado, flat white or long black: the staff can help you choose by flavour, then point you towards a bag for your own brewer. Decaf is available too.
V60 gives you a slower way to explore the selection, while batch brew is ready to pour if you are passing through. Allow time for a hand brew and check which beans are available that day. Loose-leaf tea and hot chocolate cover a visit with someone who does not drink coffee.
Pastry
Cinnamon rolls, cardamom buns and canelés have featured in the changing pastry selection. Choose from the counter and make it coffee with something sweet; this small shop is a better fit for that than a full brunch.
Service & Room
Vlad and the team make time for questions about origins and roasting. Visit alone or with one other person if you want to sit; a larger group should plan on takeaway.
