Coffee

Start with espresso. Revolution is the long-running house blend and the clearest route into Blackstar's everyday style, while Sweet Dreams and changing single origins give the bar room to move. Ask what is on the main grinder, then choose a flat white, long black, or short espresso before turning to the more elaborate cold drinks. The value of a roaster-owned counter is the conversation: the staff can match the cup to milk, black coffee, or the bag you plan to brew at home.

Cold brew is the other signature. Blackstar was serving cold-pressed coffee in Brisbane long before it became a standard warm-weather menu line, and the current range treats it as a full programme rather than one iced option. It is the sensible second order on a hot afternoon, especially if you want to compare the house espresso profile with something cooler and longer. Matcha and cream-topped cold drinks widen the menu, but coffee remains the reason to cross town.

Filter

Filter earns attention here because the roastery keeps a changing single-origin release alongside its espresso coffees. Blackstar has worked with V60 and Aeropress service, and recent filter releases have included a naturally processed West Java coffee. Ask what is open and how the bar is serving it that day; a brewed cup is most rewarding when the current lot, rather than a preferred method, leads the order.

The retail shelf completes that part of the visit. Bags cover house blends, seasonal espresso, and rotating filter roasts, with subscriptions and brewing gear extending the range online. Drink first and buy second. A bar recommendation based on the cup in front of you is more valuable than choosing from tasting notes alone, particularly when the single-origin offer changes with the season.

Food

Breakfast is substantial enough to change the plan from a coffee stop into brunch. Eggs, breakfast burgers, bowls, savoury plates, pastries, and plant-based options make this more than a token cabinet. The Benedict is a recurring order, while a pastry or bacon-and-egg roll keeps the visit shorter. Food and coffee both run throughout the cafe day, so the room works for a full morning without shifting the coffee to the background.

Choose the size of the meal to match the crowd. A coffee and pastry is easier when Thomas Street is busy; a plate makes more sense when you can take a proper table and let the kitchen set the pace. The cafe's backstreet position changes the mood. Thomas Street is close to West End's main strip but removed from its heaviest foot traffic, and the room feels rooted in the neighborhood rather than staged as a flagship.
