Varietale

Chapinero, Bogotá

Go for Colombian coffees roasted in-house, a broad filter menu, and a spacious Chapinero room built for a longer cup.

Share

Varietale Chapinero sits on a steep eastern street in Chapinero, north of Bogotá's historic centre and close to the university belt that feeds much of the neighborhood's daytime rhythm. The room has the scale of a proper city cafe rather than a tiny espresso counter: indoor seating, a terrace, a garden feel at the edges, shelves of coffee and tea, and enough corners for a solo cup, a laptop stretch, or a long conversation.

Choose this location over the brand's more transit-led shops when you want Varietale as a full coffee stop, not just a name on a bag. It is the address where the roaster's broad Colombian coffee program has enough space to become a visit.

Coffee style

The coffee case is the point. Varietale buys and roasts Colombian coffees, with the brand framing its work around direct producer relationships, different origins, and a broad collection of brew methods. The best order is to start with a filter or ask what is tasting clearest that day, then browse beans before leaving.

Espresso is there, but the stronger reason to shortlist Varietale is the range: house-roasted Colombian lots, multiple filter methods, and enough barista structure for a visitor to compare regions or processes without turning the visit into a formal tasting.

Food

Food is more than padding, especially at Chapinero. The kitchen runs almost the full day, with brunch plates, tartines, arepas, cakes, cheesecakes, cinnamon rolls, matcha cake, and fresh pastry in the mix. It should not be framed as a bakery-first stop, but the food makes the room work for late breakfast, a midday pause, or a second coffee rather than a quick stand-up shot.

The feel

Chapinero gives Varietale its strongest setting. The area rises toward Bogotá's eastern hills, and the cafe's house-like layout softens the pace of the surrounding streets. It can be busy and the service pace can feel uneven, so this is not the cleanest pick for a tight schedule. It suits a slower visit: sit outside in daylight if weather allows, use the upstairs or inner seating for work, or meet someone when the evening hours make a normal cafe plan too early to end.

Why Varietale is shortlisted by Filter Notes

Varietale earns the Bogotá shortlist because it joins three things travellers often have to chase separately: Colombian roasting, a broad filter programme, and a room with enough atmosphere to make the cup feel rooted in the city. Cross town for the house-roasted coffee, the filter choice, and the Chapinero terrace; know before going that the page should stay anchored to this address rather than the wider cafe network.
