At Elevate Coffee Lab, stools face a terracotta-coloured coffee counter and large windows look onto a small square in De Pijp, south of Amsterdam's old centre. Brewing equipment and bean samples occupy the bar, with relatively little furniture elsewhere. Table service and a laptop-free policy make this a place to sit with a carefully chosen coffee.
Coffee
Founder Ahmad Alshikh previously led roasting at Keen Coffee. At Elevate he works with guest roasters, changing the menu roughly every six to eight weeks. Choose the coffee first, then discuss whether to drink it black or with milk. The team can explain the options without assuming you already know a particular variety or processing method.
Filter
Brewed-to-order filter is the strongest reason to cross town. Alongside the regular selection, the bar has offered frozen microlots and competition coffees in small quantities. Ask what is currently open and how the cups differ; a particular rare lot is never guaranteed. Sitting at the counter lets you watch the preparation, then taste the coffee as it cools. Bags of beans are available to take home.
The visit
Pastries and cake provide a light accompaniment, with a small selection rather than a brunch menu. Come for one cup and a croissant, or give yourself time for a second coffee. Table service and individual brewing can mean a wait when the small team has a full room.
The café is laptop-free and does not offer sugar. Window seats and stools keep the visit compact; some of the seating is better suited to a coffee stop than a long afternoon. Private espresso, filter and tasting workshops can be booked for a more involved introduction.
Why Filter Notes shortlisted Elevate Coffee Lab
Choose Elevate for its changing guest-coffee menu and a guided filter at the bar. Give it an unhurried part of the day, expect a small food selection and leave the laptop behind.
